When we make typical Rice Krispy treats, everything put in is completely void of nutrients. In addition, Christy let us know Rice Krispies has high fructose corn syrup! What a disappointment. Oh well, no need to fear, let’s make these instead this Halloween and give our kids a Halloween treat that actually has some vitamins, minerals, and tastes AMAZING!!
Fruit and Nut Crispy Treats
- 1/3 cup unsweetened coconut
- 1/3 cup raw almonds
- 1/3 cup raisins
- 1/3 cup dried apricots
- 1/3 cup cashews
- 5 ounces baking white chocolate (Check your labels! Get the most simple ingredients possible. No hydrogenated fats! My label had: sugar, cocoa butter, milk, non fat milk, soy lecithin, artificial and natural flavors. Almost perfectly complies with my 5 ingredients or less rule)
Chop all dry ingredients or place in food processor and pulse for just a second.
Melt white chocolate. Blend everything together and shape into Halloween molds. Chill for 1 hour.

Those are delicious! I had to substitute sunflower seeds for the cashews and I ended up blending everything to a coarse powder instead of leaving it chunky. We also rolled it into balls – I know…it’s like it isn’t even the same recipe right? :) However, even my nut hating daughter ate one. I don’t know if she will come back for more…but at least she tried it! Thanks for all your great info and recipes on this blog!
Sounds good Shauna.. I bet the more you grind up the ingredients, the less white chocolate you would have to use. Was it too much chocolate? I should have added sunflower seeds too! I even have them!

YUM! What brand of white chocolate chips do you buy? I find that finding white chocolate chips with acceptable ingredients is exceedingly hard to do. Ghirardelli white chocolate chips (what I usually buy) are fine, but I like your chips’ ingredient list better!
