It’s Easy To Be Green

 

I was so sure checking out at the grocery store that the cashier would say something about how every single thing in my cart was green!  I was laughing to myself about it as I put everything on the conveyor belt.  All I got was a comment from the bagger, “Green Tortilla’s? I’ve never seen green tortilla’s before and I’ve worked at a grocery store for 4 years!”

Although I was collecting food for some St. Patrick’s Day posts, I couldn’t help but consider how great the color green is for our health!  So, here’s two sources that said it well:

The Food Network
Chlorophyll, a green pigment found in the leaves of plants, gives foods their green hue. Green colored fruits and veggies contain a wide variety of vitamins, minerals and phytochemicals — plant compounds that help fight disease. (source)

Today’s Dietitian

“Green vegetables are excellent sources of vitamin K, folic acid, potassium, as well as carotenoids and omega-3 fatty acids,” adds Kasik-Miller. “Folic acid is needed to prevent neural tube defects during pregnancy, and vitamin K is essential in blood clot formation. Diets high in potassium are associated with lowering blood pressure, and there is an inverse relationship between cruciferous vegetables and cancer, especially colon and bladder cancers.”

“In addition, sulforaphane, a phytochemical present in cruciferous vegetables, was found to detoxify cancer-causing chemicals before they do damage to the body,” says Tsang.

So, while everyone was sitting down to pink hearts and flowers today, I made a green wrap that turned out delicious!  It had:

1 Spinach Wrap

2 TBL Mozzarella cheese, shredded

1 Avocado, sliced

Melt the cheese on the wrap.  Place avocado down the center of the wrap, and roll up!

When making wraps for your kids, secure it with a  toothpick that they can see!  these extra long picks are perfect for wraps.  I found them at an authentic Japanese market.  They’ve lasted for years!

  1. Loving the green foods as well!! I have my husband addicted to putting an avocado spread on his sandwiches for work rather than his typical mayo or mustard :) And not many lunches/dinners go by without at least one green friend to accompany it!!
