Egg in a Red Bell Pepper Flower

 


I promise this to be my last pepper post for awhile! But, this idea is something my husband told me about that his work friends have been making.  Eggs, cooked inside a pepper.  It’s as easy as it looks:

  • Slice bell peppers through the middle.
  • Place sliced pepper on a hot skillet.
  • Crack an egg into the center.
  • When egg whites are no longer runny, flip and cook on the other side.

It’s tough to get veggies in for us at breakfast, so these are great.  What do you like to do with bell peppers?

    I’m not quite sure how you would flip the egg if it’s already inside the pepper… I’d just do this in the oven! Looks great!

    Angie: Oven’s a great idea! Also, when you cut the pepper thin enough, it flips really easily. It tastes sooo good cooked on the griddle for some reason..kind of that caramelized pepper taste.

    REtro: I’m so sorry, I’m cleaning out my inbox today after a HUGE project. YES! They can be baked, but that yummy caramelized flavor you can get with peppers cooked in a skillet is soooo good. You should try it!

    I just made these for my 5-year old for lunch. Mine did not turn out that pretty, but he gobbled them up anyway. I used cucumber sticks for the stems. He wants them again tomorrow.

    This would be a great recipe if I liked my eggs sunny-side-up. Maybe my son will like this recipe. I shall try this when he gets old enough to eat it. He’s only 9 months now.

    Asilee, you can even hard cook the egg all the way through.. of course it won’t LOOK the same, but it is still delicious!!
