Thanks to Facebook, I not only found out my neighbor, Julie, has a preschool, but I also noticed she did a fun, food activity with her preschool kids this week!
Rainbow Toast: In honor of St. Patrick’s day, of course! Julie was so excited about making these with her kids, she couldn’t even sleep the night before!

We did the St. Patrick’s Day carrot cupcakes today – WONDERFUL!!! “It really tasted like high quality,” my husband said.
We used to love Baker’s Square carrot cake, but they went out of business (at least where we lived). That’s probably a good thing because the ingredients weren’t healthy at all.

Be sure to use natural food-based dyes for the rainbow toast, though. Food coloring is so toxic to children that it has been banned in most European countries. The only reason it is still legal in the US is because the large corporations who produce it have such highly paid and influential lobbyists. Read _The UNhealthy Truth_ by Robyn O’Brien to learn more about this–it is a book that forever changed our family’s idea of what is and isn’t healthy eating!
