    This is the last day to enter to win this awesome book, Poems to Fruits, and Odes to Vegetables!

    Pancakes and waffles are so easy to “hide” nutrient rich fruits and nuts!  On Saturday we set out to make our typical waffle recipe, but this time, puréed some banana, and ground up some walnuts for a little pizzaz!

    First the dry ingredients:

    image Then the wet:

    Blended together:

    image And only after the full recipe was prepared did I chop some walnuts:  (The kids like to do this with a mallet, but I wasn’t in the mood)

    image Pureed some bananas (Again, I preferred the food processor to actually mashing with my own energy)

    image Then slowly folded the nuts and banana into the waffle mixture.

    And, that’s it!  This kid loves them:

    image However, this recipe makes a TON of waffles.  I always make them all and freeze the leftovers.  We can eat these for several more days by just popping them in the toaster.

    We can’t do nuts at our house-the hubs is allergic:( I would love these though! I love making whole wheat waffles with fruit toppings. No syrup necessary, just fruit. Sometimes I will add a dallop of yogurt too, instead of whip cream. I also like to sneak in wheat germ, flax seed to my whole wheat mix.

    What a great idea! I am adding some pureed fruit and nuts next time I make waffles!

    YUM! We made waffles last night. I like to make cinnamon waffles – add a couple of TBSP of cinnamon to the mix and a handful of cinnamon chips (King Arther company makes trans-fat free cinnamon chips). Love the looks of your recipe and will definitely try it soon!
