The Simple Dinner
My husband does more than his share of household responsibilities. What I love most (besides that he is totally hot) is the days I’m busy, he also makes dinner. His meals are simple, fast, and always healthy.
Last night I came home to burritos. He mixed one can kidney beans, one can black beans, salsa (Herdez is his favorite), and such a small amount of cheese I didn’t even notice it was in there. (I told you we use beans a lot). He wrapped up tortilla’s with the filling. Laid them in an 8 X 8 pan and baked in the oven to heat it all the way through and make the tortilla’s a bit crispy. They were delicious. I’d have taken a picture, but there are none left.
I spread Avocado on mine because I love to spread avocado on anything.

I think Wade and I have similar tastes. That dinner sounds awesome to me, but I think the kidney beans wouldn’t go well with Joel. And Herdez is MY favorite, too! I used to only find it at Ream’s (the ghetto one on Center St. in Provo) so I’d buy like ten jars of it when I’d go there. But I’ve been buying Costco salsa lately (not as good). Now that you’ve reminded me I’m going to have to pick up a few jars next time I’m in a regular grocery store.

We had just about the same thing. I got the recipe from a blog of one of your readers. Can’t remember who. But I used our homemade tortillas, brown rice, black beans, homemade salsa,and monterey jack cheese. Brushed with oil and baked. Added a little bit of cheese on top and put in the broiler. We had ours with avocado, black olives, sour cream. OOOOOOOH it was so good. My 4 and 5 year old ate two!!! Not only was it a great filling meal but a good use of food storage too.
