The Triple Threat

img_2053.gifThe flip-flopper has a favorite dip that is loaded with vitamin C, Lycopene, monounsaturated fat, fiber, protein,  lutein.  It’s easy to make and delicious.  We include

  • Chopped tomatoes
  • Diced avocados
  • A can of black-eyed peas
  • A squirt of zesty italian dressing. 

I personally don’t even need chips to eat this yummy combination.  I spoon it straight out of the bowl into my mouth.  The flip-flopper asks all winter for me to make some, but I never buy avocados in the winter.  She was with me when I bought them the other day, so she’s been begging me to make it.  Then as if to push me over the edge she adds, “But you can put it in your blog, and you can take my picture while I’m eating it.”  Good plan flip-flopper, how would I know what to blog about without you.

Sounds like what we call salsa salad. I’ve got it on my recipe blog. We also add black beans, corn, and purple onion. I actually just made some of this yesterday after not having it for awhile. I forgot how good it is.

Every time I make this, it’s a little different. But generally I use 1 can black eyed peas, 2 chopped avocados, 2 chopped tomatoes, a few squirts of zesty Italian dressing. Just enough to coat everything.

Do you buy a particular chip that is healthier than others? My 2 year old loves chips and dip but he only gets it when we go out to eat somewhere. I want to make all these great dips for him, but want to feed him a healthy chip. Any suggestions are greatly appreciated.

haven’t done enough comparative shopping to give you a good answer. We use corn tortilla’s, slice them and bake! It’s pretty quick, and it helps us to limit how many we’re eating (as opposed to a whole bag of chips we keep dipping into.
